At least in our house this is our standard sourdough bread. Nothing fancy.

150g Sourdough starter
1kg whet flour (stone milled, something with flavor and character)
700g water
20g salt
50g water
Mix starter, water and flour.
Let it rest for about 1 hour.
Mix water and salt. Then gently work it into the dough.
Not necessary but easier if dough is now transferred to a bigger tub or similar.
Rest for about 1 hour.
Stretch and fold the dough. Rest 1 hour. Repeat 3-5 times.
Lightly flour a workbench or table. Empty the dough onto work surface.
Cut in half and shape round. Rest 1 hour.
Shape into bread and place in baskets. After 2-3 hours place in fridge over night.
Heat oven to about 250C. Stone plate is good to have also something to raise the humidity.
Shallow cuts on top of the dough/bread before it goes into the oven.
Bake until core temp reaches 96-98C. Let cool down completely before slicing it.
